Hot Smoked Albacore Tuna
Josephson's Smoked Albacore Tuna Loin is truly a smoked seafood delight, with a very rich flavor and mild
taste. There is no waste; only solid white meat tuna with a light smoke skin. Hot Smoked Albacore Tuna is first cured
in brine. Next it is laid out on racks and smoked and cooked in a three stage process in our AFOS smoking ovens. The
process includes a cold smoking step to dry and add flavor, a period of increased temperature and smoke to continue drying
and smoking, and finally an intense cooking and smoking stage to bring out the rich flavor of the Albacore tuna.
Hot Smoked Seafood will keep two weeks under refrigeration and up to three months in a vacuum bag in the freezer.
